I'm inspired to post this recipe merely because I'm eating this little salad right now and it is super tasty! It combines several items that are, to me, a taste of Summer. And, as a huge plus, it was quick, easy, and was thrown together with things that I had on hand and didn't have any specific uses for otherwise.
2 lemon cucumbers, sliced
5 cherry tomatoes chopped in half
1 hand full of basil, torn into reasonably sized pieces
a drizzle of balsamic vinegar
a pinch of salt
a couple twists from the pepper grinder
I made this single serving sized salad for myself last night and let it sit overnight-- it's easiest for me to pack my lunch for work the night before. I think that the flavors benefited from sitting together for a while, but it'd also likely be good straight from the get go. And fortunately, the basil didn't get as wilted as I thought it would.
A perfectly Summer-y and fast friendly (oil-free) salad.
I pretty much love anything with basil. :)
ReplyDeleteI just made something similar. Layer tomatoes, thinly sliced vidalia onions, and peeled and sliced cucumbers. Drizzle with olive oil, vinegar (I used seasoned rice vinegar this time), salt, pepper, and oregano. I did it like this: tomatoes and onions, drizzle, cukes, drizzle, tomatoes and onions, drizzle, cukes, drizzle, etc. YUM. Then I saved the leftover drizzle in the bottom of the bowl (after the salad was all eaten) as vinaigrette for another salad sometime.
