Call for Ideas

I'm in the process of putting together our next seasonal menu (Aug. 16-Nov. 14, I think) and I'm trying to think of some lunch ideas for our fasting days in particular. So far I'm rather stuck! PBJs are always our go-to, and we actually enjoy them, but I want to switch things up a bit.

Something that we've enjoyed in the past is a sandwich with tapenade, hummus, and roasted bell peppers, but of course the tapenade usually has oil in it. And look, I just learned that it generally has anchovies in it as well, though I think we'd be fine cutting that out too.

So, I have two questions:

What are some good, healthy, easy to prepare lunch ideas for fasting days (no meat, dairy, fish, oil, wine)?
Is there any way to make tapenade without the oil?

  1. Since during a fasting period you're supposed to spend less time preparing food, I like making a large batch of soup on Wednesday night and then eat the left overs on Friday for lunch. We even invested in some covered bowls so Dn.Rico could take the soup to school with him.

  2. Our kids usually have PBJ versions (PB, PBJ, PB honey, etc.) with fruit on the side (whatever's around). This is their preference, by the way. I have typically had leftovers from the previous fasting meal as has Father. I don't exactly "blow it off" but I don't spend my time on lunch. I'll make something healthy for supper and put my efforts there.

  3. Sandwiches:
    Hummus and Cucumber
    Avocado and Sprouts

    We also eat Garden or Boca Burgers on sandwich bread because we never have buns!

  4. Thanks for these ideas, ladies. I think the key is to keep it simple, as much as I want to branch out. Realistically, simple (leftovers, sammies, etc.) is what works best for now. Thank you for that reminder!

  5. We usually do leftovers too. Although, the kids and I do not tend to fast at lunch time. I make a fasting breakfast (to which I usually add eggs) and a fasting dinner. I am nursing and find I need the protein

    THAT said, here are some quick ideas... baked potato topped with baked beans or veggie chili (either leftover or canned), pasta and red sauce, seasoned beans (I use TJs Cuban Black Beans) mixed with rice for rice and beans, soup made from a can each of diced tomatoes with green chilies (or add a can of green chilies and a can of tomatoes), black beans, and corn.

    That's all I can think of off the top of my head. But then, I do what Mat. Anna does—focus my energies on dinner, especially since having #3 two months ago!
