"Green" Tomato Soup

Sarah mentioned green smoothies in her post below, so I thought I'd chime in with my "recipe" for blender tomato soup. Super easy and yummy, and another great way to use up those greens. I have a Vita Mix which leaves no trace of texture, but even a regular blender will work.

2-4 tomatoes (depending on size)
1 large carrot
slice of white onion *or* stalk of green onion
handful of greens (spinach, chard, kale, mustard greens, collard greens)
water to fill bottom of blender
salt and pepper to taste

Blend until smooth. The Vita Mix will get it nice and steamy, but you can also pour the cold soup into a little pan and heat over the stove.

  1. I remember you mentioning blender soup sometime in the past, but I didn't know what you put it in. This sounds so tasty!

  2. Not to stir up old posts, but this reminds me, I wanted to ask about what particular model of vitamix you have and if you find it satisfactory. I haven't done any research yet to even know what glories the different models bring, but hey, gotta start somewhere.
